With Easter around the corner, I have the perfect recipe for your leftover ham!  These Ham Fried Rice Lettuce Cups are so yummy and healthy!  Filled with ham, carrots, eggs, green onion, and cauliflower rice, your taste buds and tummy will be happy.  I serve the fried rice in lettuce leaves and top them with my homemade ranch... can't get better than that!  This meal is easy, fast, and delicious.  Recipe below!


Ham Fried Rice Lettuce Cups (With Cauliflower Rice)

Ingredients:

Ham Fried Rice: 
1 cup uncooked white rice (or 2 cups cooked rice)*
1.5 cups cauliflower rice**
2 Tbs. of butter divided
4 eggs
3/4 lbs. ham cut into chunks 
1 bunch of green onions diced 
1 large carrot or 2 medium carrots shredded***
1/4 cup low sodium soy sauce 

1-2 heads of lettuce (butter, romaine, red leaf, iceberg etc.)

Homemade Ranch:
1/2 cup mayo
1/2 cup buttermilk
1/2 tsp. garlic salt 
1 tsp. dried parsley 

*You could use all-white rice, all cauliflower rice, or a mixture like I did above.  Just aim for 3.5 cups of cooked rice total. 

**I made my own cauliflower rice by pulsing a head of cauliflower rice in my food processor.  You can also buy cauliflower rice at your grocery store in the freezer section. 

***Other yummy add-ins could include peas, edamame, or corn.


Ham Fried Rice Directions:
  1. Rinse 1 cup white rice and transfer to small/medium pot.  Add 2 cups of water.  Bring to a boil.  Cover and turn down to a simmer for 20 minutes.  Set aside. 
  2. In a large non-stick pan or wok, melt 1 Tbs. of butter over medium-low heat.  Add eggs and scramble with a spatula.  Cook scrambled eggs until soft and then transfer to a small bowl/plate.  The eggs will continue cooking later. 
  3. In the same pan/wok the eggs were cooked in, melt 1 Tbs. butter over medium-high heat.  Add ham chunks and cook until browned on one side (2-3ish minutes).  Once browned on one side, flip ham over and brown other side (2-3 minutes).
  4. Once ham has browned, add diced green onions.  Stir and cook for 1 minute.
  5. Add shredded carrots and cauliflower rice to ham and green onions.  Stir and cook for 2-3 minutes until carrots have slightly softened. 
  6. Add back in the scrambled eggs.  Stir until incorporated. 
  7. Add cooked white rice and soy sauce.  Mix until everything is incorporated.  Let cook all together in pan for a couple minutes.  (I like to let the rice get a bit crispy on the bottom, so I stir less often once everything is together.)
  8. Serve with lettuce and homemade ranch. 

Ranch Directions:
  1. Combine buttermilk, mayo, garlic salt, and parsley in a small bowl.  Whisk together.  Keep refrigerated until ready to eat.
