Homemade Granola
I have made this recipe literally every week this summer, and I absolutely love it! We used to always buy granola at the store, but that has changed! Granola at the store can be expensive, and because of all the added sugars, it really is not that healthy for you. But with this recipe, you get to control what goes into it. Plus, this granola is SO easy and more cost-effective. My suggestion is to head to the bulk area of your grocery store and find the nuts, seeds, and dried fruits that are on sale. This recipe is super versatile and customizable. I put my favorites below, but the options are endless.
This granola is great as a snack, on top of yogurt, or just for breakfast. My favorite way is to eat it like cereal - delicious. But no matter how you eat it, homemade granola tastes 10 times better than store-bought and will make your taste buds happy. Enjoy!
Homemade Granola
Ingredients:
3 c. old fashion oats
3/4 c. chopped unsalted almonds (or any nut you like... walnuts, pecans, etc...)
1/4 c. pumpkin seeds
1/4 c. dried cherries (or other dried fruit like craisins)
1/4 c. dried blueberries (optional)
4-5 Tbs. honey
2 Tbs. vegetable or canola oil
1 tsp. vanilla
1 tsp. cinnamon (optional)
dash of salt
*Optional: Add in 3/4 cup of ground flax and 3/4 cup steel-cut oats (then increase the oil to 3 Tbs. total)
Directions:
- Preheat oven to 315 degrees F and line a baking sheet with parchment paper.
- In a large bowl, mix all ingredients with a spoon. If you like granola clusters, make sure to leave clumps when mixing.
- Once combined, pour onto a baking sheet and spread evenly covering the parchment paper.
- Bake for 12-15 minutes.
- Let cool and store in a container in fridge.
