Are you craving tomato soup but do not have all the ingredients to make it from scratch?  No worries!  This Doctored Tomato Soup is perfect for you.  All you need is a can of tomato soup, some spices, veggies, and lemon, and your canned soup will taste totally new.

Surprisingly, this soup no longer tastes like Campbell's.  It is still sweet like the canned soup, but the flavor is tweaked.  The true secret ingredient is lemon juice.  It brightens up the soup and completes the transformation.  Let me know if you give it a try!  Recipe below!

Ingredients

  • 1/2 red bell pepper - diced
  • 1/4 red onion - diced
  • 1 Tbs. olive oil
  • 1/2 tsp. garlic powder (or 1 large garlic clove)
  • 1/8 tsp. cayenne (add more if you like it spicy, add less if you are super sensitive to heat)
  • 1 tsp. Italian seasoning (or just a blend of dried basil, oregano, thyme, rosemary, & parsley)
  • 1 10.75 oz. can Campbells Tomato Soup
  • 10.75 oz. milk and/or cream
  • Juice of half a lemon
  • Salt and pepper to taste

Instructions

  1. In a medium pot, heat olive oil over medium heat. Add diced red onion and red bell pepper. Saute until onion is translucent (about 3 minutes).
  2. Add garlic powder, cayenne, Italian seasoning, and a dash of salt and pepper. Stir, stir, stir for about a minute (so nothing burns.)
  3. Add can of tomato soup and a can full of milk (I used 1/4 can cream and 3/4 can milk, but use whatever you have.) Turn the heat down to medium-low and let the soup come to a boil. Let bubble for 3-4 minutes, whisking occasionally so nothing sticks to the bottom.
  4. Add the juice of half a lemon.
  5. Serve with grilled cheese.
