Salmon Fish Tacos
It's simple; I love salmon. And I especially love salmon in this easy fish taco recipe. The spices on the salmon give the taco a nice kick while the cool slaw balances out the flavors. Serve the fish and slaw on toasted tortillas with a splash of lime juice, a dollop of sour cream, and creamy avocado, and your taste buds will be very happy. This meal is quick and refreshing on a hot summer day! Enjoy!
Ingredients:
Slaw:
1/4 c. mayonnaise
2 Tbs. lime juice
1 Tbs. honey
2 c. cabbage - sliced - green or purple
1-2 medium carrots - shredded
1/2 c. corn kernels
1/2 jalapeno - minced - you can add a whole jalapeno if you want more spice
Salmon:
1 1/2 -2 lbs of salmon - I cooked a filet per person
Zest of 1 lime
3 Tbs. butter
1/2 tsp. cumin
1/2 tsp. chili powder
1/4 tsp. cayenne
1 1/2 tsp. paprika
1/2 tsp. salt
1/8 tsp. black pepper
Other:
10 corn tortillas - white or yellow
2-4 limes for squeezing on top of tacos
Sour cream
1-2 Avocados - cubed
Instructions:
Salmon:
- Turn oven on high broil.
- In a small bowl, melt butter then add lime zest, cumin, chili powder, cayenne, paprika, salt, and pepper. Mix together.
- Place salmon filets on baking sheet and pat dry with paper towel.
- Coat top of salmon with butter/spice mixture.
- Depending on your thickness of salmon filet, broil salmon for 6-9 minutes (watch closely, salmon goes from perfect to overdone quickly). Salmon is done when flakes easily.
- Flake salmon and set aside.
Slaw:
- In a large bowl, combine mayo, lime juice, jalapeno, and honey. Whisk together.
- Add shredded cabbage, carrot, and corn kernels.
- Toss together.
Putting it together:
- Toast tortillas on stove or in oven.
- In tortilla add salmon, slaw mixture, cubed avocado, a dollop of sour cream, and a splash of lime juice.
- I can usually eat 2, while my husband usually eats 4. Enjoy!
