I love a good Caesar salad.  Homemade tangy dressing, crisp lettuce, golden croutons, with parmesan cheese and black pepper simply makes me happy.  Plus, Caesar salads are quick and easy to assemble.  I love this Caesar with grilled chicken, shrimp, or salmon, but it is also delicious on its own!  

One of my favorite parts of this salad is the dressing. Usually, Caesar dressing contains anchovies; however, this dressing is tangy and zingy without them!  Yay!  

Besides the delicious dressing, the homemade croutons steal the show.  They are crunchy on the outside with the perfect amount of chew on the inside.  My husband usually won't touch croutons on a salad, but these are his favorite!  Once you make a batch, they will disappear fast!  You can use any bread you like, but homemade bread makes the yummiest homemade croutons!  

Because every oven cooks differently and every bread toasts differently, keep an eye on the croutons in the oven!  I have tried several bread varieties, and seven minutes on bake and three minutes on broil works perfectly for me.  So just see what works in your kitchen!  Recipe below!

Caesar Salad with Homemade Croutons

Yield: 2

Ingredients

Croutons
  • 1 Tbs. olive oil
  • 1 loaf of bread (store-bought or homemade will work! I used this bread for the pictures above.)
  • Salt and pepper to taste
  • 1/4 tsp. garlic powder
Caesar Dressing
  • 1/4 c. grated parmesan cheese (I buy mine from Costco)
  • 3 Tbs. olive oil
  • 1/4 c. mayo
  • 3 Tbs. lemon juice (about the juice from 1 lemon)
  • 1/2 Tbs. Dijon mustard
  • 1 Tbs. Worchestershire
  • 1/4 tsp. garlic powder
  • 1/8 tsp. black pepper
  • Salt to taste
Salad
  • 2 heads of romaine (or 2-3 heads of baby romaine, my fav!) chopped
  • Parmesan cheese for sprinkling (about 1 Tbs. per person)
  • Pepper to taste

Instructions

Homemade Croutons
  1. Preheat oven to 375 Fahrenheit
  2. Line a baking sheet with parchment paper
  3. Cut the loaf of bread into 3/4 inch cubes and place on a baking sheet
  4. Lightly drizzle olive oil over cubes
  5. Sprinkle salt, pepper, and garlic powder over cubes
  6. With a spoon, shuffle the cubes around to ensure oil and seasonings are distributed
  7. Bake in the oven at 375 for 7 minutes
  8. After 7 minutes, switch your oven to broil and broil for 2-3 minutes. Watch the bread carefully! Every bread toasts differently, and every oven cooks differently! Just keep an eye on them and cook until golden.
  9. Let cool on the sheet pan and then serve on the salad.
Dressing
  1. Whisk all dressing ingredients in a bowl. 
  2. Serve with salad.
Salad
  1. Add chopped lettuce, parmesan cheese, croutons, and pepper to a plate.
  2. Drizzle with the desired amount of dressing
  3. Enjoy!
