Yield: 2
Prep time: 5 MinCook time: 10 MinTotal time: 15 Min
Ingredients
- 1/2 red bell pepper - diced
- 1/4 red onion - diced
- 1 Tbs. olive oil
- 1/2 tsp. garlic powder (or 1 large garlic clove)
- 1/8 tsp. cayenne (add more if you like it spicy, add less if you are super sensitive to heat)
- 1 tsp. Italian seasoning (or just a blend of dried basil, oregano, thyme, rosemary, & parsley)
- 1 10.75 oz. can Campbells Tomato Soup
- 10.75 oz. milk and/or cream
- Juice of half a lemon
- Salt and pepper to taste
Instructions
- In a medium pot, heat olive oil over medium heat. Add diced red onion and red bell pepper. Saute until onion is translucent (about 3 minutes).
- Add garlic powder, cayenne, Italian seasoning, and a dash of salt and pepper. Stir, stir, stir for about a minute (so nothing burns.)
- Add can of tomato soup and a can full of milk (I used 1/4 can cream and 3/4 can milk, but use whatever you have.) Turn the heat down to medium-low and let the soup come to a boil. Let bubble for 3-4 minutes, whisking occasionally so nothing sticks to the bottom.
- Add the juice of half a lemon.
- Serve with grilled cheese.
