Homemade Chicken Noodle Soup
With the weather starting to cool down, I have enjoyed making hearty, comforting soups. This creamy chicken noodle soup recipe will warm your insides and fill your tummy! Full of vegetables, chicken, and noodles, it not only tastes delicious but will make your whole family happy.
Ingredients:
8 cups of chicken broth
2 chicken breasts - shredded
1/2 package of Country Pasta noodles
1-2 cans cream of chicken soup
1 cup red potatoes - diced
10 oz. frozen corn
4-5 large carrots - cut in disks
2-3 stalks of celery - diced
1/2 yellow onion - minced
2 cloves garlic - minced
2 Tbs. butter
1-2 tsp. parsley flakes
Salt/Pepper to taste
Directions:
- In a crockpot, cook two chicken breasts on low for 3-3.5 hours. Shred and set aside. (You can also use Rotisserie chicken from Costco.)
- Cook noodles in boiling water and set aside.
- In a large pot, add butter, onion, and garlic with a pinch of salt and pepper and cook on medium heat for 2-3 minutes. Then add diced celery and continue cooking until onions are translucent.
- Add chicken broth and bring to boil.
- Add diced potatoes and let cook for 10 minutes.
- Add diced carrots and continue cooking till carrots and potatoes are tender (usually about 5 more minutes).
- Add shredded cooked chicken, frozen corn, and can of cream of chicken (optional to add an additional can for more flavor). Stir until cream of chicken is completely integrated.
- Add cooked drained noodles to soup.
- Let warm through and add parsley flakes with salt and pepper to taste.
- Serve with saltine crackers or french bread. Enjoy!
