Sheet Pan Gnocchi (Hot and Ready to Serve)


Say hello to 2021!  If you are looking for a fast, easy, healthy meal, this recipe is for you!  Grab your favorite veggies, a package of dried gnocchi, and your favorite spices, and you will have a nutritious meal in under 30 minutes.  Simply place the veggies and gnocchi on a lined sheet pan, drizzle with olive oil, sprinkle with spices, and then straight into the oven it goes.  Easy!  

The veggies and gnocchi go perfectly together.  In the oven, the gnocchi becomes toasted on the outside and soft on the inside.  So delicious!  Plus, roasting the vegetables brings out their sweetness.  The cherry tomatoes pop, the bell peppers blister, and the onions caramelize.  This is a great way to get in your servings of vegetables! 

This recipe is customizable.  My favorite combination of veggies is below, but I have also added sliced mushrooms and zucchini, and they also work great.  Yum!  You can also add any spice you like... rosemary, dried chili flakes, basil, oregano, etc.  Choose your favorites and give it a try! 

Need to feed more people?  Fill up your sheet pan, and the cooking time should still be the same.  Or if you prefer, separate the extra veggies and gnocchi onto two baking sheets.  This meal is seriously such an easy and yummy meal that your family will love!

Morgan's Sheet Pan Gnocchi

Ingredients

  • 16 oz. potato gnocchi (found near pasta in the grocery store)
  • 1 bell pepper (red, orange, or yellow) - chopped into 1-inch pieces
  • 1 pint cherry tomatoes
  • 2 handfuls of green beans
  • 1/2 large red onion - chopped into 1-inch piece
  • 3 Tbs olive oil
  • 1/4 tsp. dried thyme
  • 1/4 tsp. garlic powder
  • 1/4 tsp. salt
  • 1/8 tsp. pepper

Instructions

  1. Preheat oven to 425 degrees F.
  2. Line a baking sheet with tinfoil.
  3. Place bell pepper, cherry tomatoes, green beans, and red onion on the sheet pan. (Make sure you separate the layers of the red onion. If they stay in chunks, they won't fully cook.)
  4. Scatter uncooked gnocchi on the baking sheet.
  5. Drizzle veggies and gnocchi with 2-3 Tbs. olive oil.
  6. Sprinkle the thyme, garlic powder, salt, and pepper over veggies and gnocchi.
  7. Using your fingers or a spoon, toss the veggies, oil, and spices on the sheet pan to make sure everything is incorporated.
  8. Bake at 425 for 10 minutes.
  9. Turn on oven broil and broil for another 10 minutes or until cherry tomatoes have popped and veggies have slightly blistered.
  10. Salt and pepper to taste.
  11. Serve and enjoy!
