Lemon Pancakes with Blackberry Topping

Ingredients
Lemon Pancakes
- 1 egg
- 1 cup milk
- 2 Tbs. oil
- Zest of 1 lemon
- 2 Tbs. sugar
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1 1/4 cups flour
Blackberry Topping
- 1 pint of blackberries
- Juice of half a lemon
- 1 Tbs. sugar
Instructions
Lemon Pancakes
- In a large bowl, mix all pancake ingredients together but flour. Mix well.
- Add flour. Combine until flour is incorporated but do not overmix!
- Heat a nonstick pan over medium heat. Once heated, pour pancake batter into pan making a 4-inch pancake. Once bubbles start to appear on pancake's surface, flip and cook on other side until golden. Recipe makes 8 four-inch pancakes.
Blackberry Topping
- To make the blackberry topping, heat a nonstick pan over medium-low heat. Add blackberries, lemon juice, and sugar. Stir occasionally to make sure sugars do not burn. The blackberries will start to break down making a sauce. Once blackberries have broken down about halfway, take pan off heat and serve on top of pancakes.
