Italian Chicken Pasta
This pasta dish is a great recipe for an easy weeknight meal. Large juicy pieces of chicken paired with sautéed cherry tomatoes, fresh green beans, sliced olives, and melted mozzarella cheese all over healthy whole wheat pasta will make your entire family happy.
Ingredients:
1 package whole wheat pasta - rotini
2 chicken breasts *Or two cooked rotisserie chicken breasts
1-pint cherry/grape tomatoes
1 can large olives
2 handfuls fresh green beans
2 cups shredded mozzarella cheese
2 Tbs olive oil
1 clove garlic - minced
Salt/Pepper to taste
Directions:
- Heat the oven to 400 degrees Fahrenheit.
- Next cook the chicken breasts (If using cooked rotisserie chicken, skip to step 5)
- Place the chicken breasts in the tinfoil and make a packet. Before closing packet, add a drizzle of olive oil. Salt and pepper to taste.
- Close packet and cook in oven till cooked through (about 30 minutes depending on the thickness of your chicken breasts).
- Once cooked, set chicken aside and cube.
- In two separate pots, cook pasta until al dente and steam the green beans until barely cooked.
- While pasta and beans are cooking, cut the olives and tomatoes in half. Set aside.
- In a frying pan, add minced garlic clove, olive oil, and halved tomatoes. Cook on medium heat till tomatoes have slightly burst.
- In a 9x13, add drained pasta, cubed chicken, halved olives, cooked green beans, and tomato mixture.
- Stir until evenly mixed.
- Sprinkle mozzarella on top and place in a 350-degree oven until cheese is melted. Enjoy!
