Mango Salsa Salmon
Salmon is one of my all-time favorite foods. I love grilled salmon, poached salmon, baked salmon, salmon with lemon, smoked salmon... really just all salmon. Lately, I have been broiling salmon in the oven with a butter and spice mixture on top. Easy and quick!
Today's salmon recipe has a slightly spicy kick that is cooled down by the sweet salsa. Serve it with quinoa and a splash of lemon or lime juice, and the meal is complete. The recipe is a favorite, and I am sure you will love it too.
Ingredients:
**for two people half the recipe
Salmon
1 1/2 - 2 pounds of salmon
3 Tbs melted butter
Spice Mix
1 garlic glove - minced
1 1/2 tsp. paprika
1 tsp. sea salt
1/2 tsp. onion powder
1/2 tsp. oregano
1/2 tsp. cumin
1/2 tsp. chili powder
1/2 tsp. cracked pepper
1/4 tsp. thyme
1/4 tsp. cayenne - this is what makes it spicy, add less if you like
Mango Salsa
1 large ripe mango - cubed
1 large avocado - cubed
1/4 cup diced grape tomatoes
2 Tbs. diced red onion
1 tsp. lime juice (or lemon juice)
1/2 tsp. salt
Other:
1 cup of quinoa with 2 cups of water
Instructions:
- Place 1 cup of rinsed quinoa with 2 cups of water (or broth) in a pot.
- Bring to boil then turn to low and keep covered for 20 minutes.
- Preheat oven to 350 degrees Fahrenheit. Once heated, switch to high broil.
- In a small bowl, combine spices and melted butter to create a spread.
- Rub mixture on top of salmon filets. Make sure the salmon is covered.
- On broil, cook salmon for 9-10 minutes (careful, it goes from done to overdone quickly).
- While salmon is cooking, combine salsa ingredients in a serving bowl.
- Serve salmon with salsa and quinoa.
