Easy Homemade Chicken Pot Pie
If you are in need of some yummy comfort food, this recipe is for you! I could eat this chicken pot pie for days as it is so yummy. It is also easy as the recipe calls for a store-bought pie crust and frozen vegetables. I cooked my chicken in a Crockpot, but a rotisserie chicken from Costco would also be perfect.
Filling: About three hours before I wanted to put the pot pie together, I placed two chicken breasts (with a drizzle of olive oil and salt and pepper) in the crockpot on low. Once cooked, I shredded the chicken and placed it to the side. In a pot, I melted butter with onion and garlic and then added flour to make a roux. Next came chicken broth and milk to the mix. Once thick, I added cooked red potatoes (that I cooked in a separate pot), the shredded chicken, and a package of frozen vegetables. The filling was done!
Into a pie dish, the mixture went. I then unrolled the refrigerated pie crust and gently placed it on top. I crimped the edges, egg-washed the top to give it a golden brown color, and for the final touch, slit four holes in the top to let it breathe. Into a 400 degree oven for 25 minutes it went and then time to eat!. So yummy! Full recipe below! Enjoy!
Ingredients:
4 Tbs. Butter
1/2 cup chopped yellow onion
2 gloves of minced garlic
3 Tbs Flour
1 1/2 cups chicken broth
1/2 cup half-and-half (I used whole milk)
1 cup diced red potato
4 cups shredded cooked chicken (or about 2 chicken breasts)
2 cups frozen vegetables (or cook your own)
1 t. salt
1/4 t. pepper
1 refrigerated pie crust
1 egg (for egg wash)
Directions:
- Preheat oven to 400 degrees
- Cook diced red potatoes in boiling water (about 15 minutes).
- In a separate pot, melt butter over medium-low heat. Add onion and garlic and cook until translucent (about 6 minutes).
- Stir in flour and cook for 1 minute stirring constantly.
- Gradually add broth and half-and-half (or whole milk). Stir until combined and cook until thick.
- Add cooked chicken, potatoes, frozen vegetables, salt, and pepper. Mix together and place mixture in pie dish.
- Unroll pie crust, and place on top of chicken mixture, crimping edges.
- Brush crust with beaten egg and cut four small vents in the top of dough.
- Bake until golden brown for 20-25 minutes.
